Vita Italian Bar & Grill is proud to welcome Chef Mitch Weaver to its newly built restaurant in Pomona, CA.

Chef Mitch is a Southern California native whose culinary expertise has spanned eateries from coast to coast.

His journey in culinary arts begins in Orange County, CA, at the prestigious Ritz Carlton in Laguna Niguel as a saucier, to Chef de Cuisine at the St Regis Monarch in Laguna Beach, CA.

Staying in Southern California, Mitch went large scale to the Los Angeles Dodgers becoming the Executive Sous Chef for Dodgers stadium, and then in 2003 took his stadium chef skills across the country to Jacksonville Florida to become the Executive Chef for the NFLs Altell Stadium for the Jacksonville Jaguars.
In 2005 Chef Mitch started his tenure with the Hyatt Corporation as Executive Chef for the Hyatt Riverwalk in Jacksonville, Florida, then on to Hyatt Regency Lost Pines in Austin, Texas, then the beautiful Park Hyatt in Vail, Colorado.

Mitch returned to Southern California in 2009 to helm Consulting Chef positions at the Commerce Hotel and Casino and Executive Chef at the University of San Diego including La Gran Terraza.

Chef Mitch brings over 16 years of high volume and high end culinary experience to our new Vita Italian Bar and Grill.
